Apple & Banana Racuchy

Add <quantity>200<unit>g</unit></quantity> of all-purpose flour and <quantity>2<unit>tbsp</unit></quantity> of sugar to a bowl
Add <quantity>1<unit>tsp</unit></quantity> of cinnamon powder and <quantity>1<unit>tsp</unit></quantity> of dry yeast
Add <quantity>1</quantity> egg and whisk to incorporate
Add <quantity>200<unit>ml</unit></quantity> of milk
Whisk until a smooth batter is formed
Chop <quantity>1</quantity> banana
Cut <quantity>1</quantity> apple, removing the core
Dice the apple pieces
Add the apple and banana pieces to the dough, mixing to incorporate them
Cover with cling film and let it proof for 30m in a warm place
Add extra virgin olive oil to a pan over medium heat
Add the dough in the form of pancakes
Cook on both sides until golden brown. Transfer to a plate lined with paper towels to dry the excess oil. Repeat the cooking process with the remaining batter
Plate the pancakes and top with <quantity>1<unit>tbsp</unit></quantity> of sour cream
