Fluffy, soft, and yummy pancakes that can be enjoyed hot or cold! These are perfect for a breakfast or for a snack during the day.
Finish them with maple syrup, honey, or just icing sugar.
Racuchy are Polish pancakes. This dish always reminds me of my childhood and of my dad. Coming home and smelling those pancakes directly from the entry door used to make my day!
You can use any sweetener here, such as honey or agave syrup, instead of maple syrup. If you want to make it vegan, just replace the eggs with an extra spoon of plain flour!
Add 200 g of all-purpose flour and 2 tbsp of sugar to a bowl
Add 1 tsp of cinnamon powder and 1 tsp of dry yeast
Add 1 egg and whisk to incorporate
Add 200 ml of milk
Whisk until a smooth batter is formed
Chop 1 banana
Cut 1 apple, removing the core
Dice the apple pieces
Add the apple and banana pieces to the dough, mixing to incorporate them
Cover with cling film and let it proof for 30m in a warm place
Add extra virgin olive oil to a pan over medium heat
Add the dough in the form of pancakes
Cook on both sides until golden brown. Transfer to a plate lined with paper towels to dry the excess oil. Repeat the cooking process with the remaining batter
Plate the pancakes and top with 1 tbsp of sour cream
Garnish with powdered sugar to taste. The apple & banana racuchy is ready
