This apple compote will be a staple in your fridge that you can use for many different things. Serve it in a dessert for your guests, paired with a crumble and whipped cream.
You can also add it to your favorite breakfast bowl or simply eat it as a light snack with a spoon.
If you use high quality vanilla and firm apples, the flavors will be absolutely beautiful.
This is a classic dish that can be enjoyed all-year round with different kinds of apples. In Denmark, we would eat our homemade apple compote (or rhubarb compote) with cream and sugar on top.
Many traditional Danish desserts contain apple compote in some form or shape.
Cut 1 vanilla bean lengthwise and scrape out the seeds
Place 1 tbsp from the 75 g of sugar on top of the vanilla seeds and mash them together using the tip of a knife
Peel and trim 500 g of granny smith apples. Medium dice them
Transfer the apples to a pot. Add the vanilla seeds and bean
Add the remaining sugar and ยผ cup of water. Cook it over medium-low heat until it starts to simmer
Cover the apples with a lid. Turn the heat to low and cook for 5m until the apples are tender and slightly mashed. The apple compote is ready
Enjoy! You can eat it as it is, use it as a pie filling, or even add it on top of some yogurt! Anyways, it is delicious!
