Apple Compote
This apple compote will be a staple in your fridge that you can use for many different things. Serve it in a dessert for your guests, paired with a crumble and whipped cream. Cut <quantity>1</quantity> vanilla bean lengthwise and scrape out the seeds
Place <quantity>1<unit>tbsp</unit></quantity> from the <quantity>75<unit>g</unit></quantity> of sugar on top of the vanilla seeds and mash them together using the tip of a knife
Peel and trim <quantity>500<unit>g</unit></quantity> of granny smith apples. Medium dice them
Transfer the apples to a pot. Add the vanilla seeds and bean
Add the remaining sugar and <quantity>¼<unit>cup</unit></quantity> of water. Cook it over medium-low heat until it starts to simmer
Cover the apples with a lid. Turn the heat to low and cook for 5m until the apples are tender and slightly mashed. The apple compote is ready
