Apple Three Ways
A dessert to enjoy all year-round, perfect for any occasion. It includes an apple in syrup that can be stored in the refrigerator for a long time, a super creamy compote with balanced texture and sweetness, and a delicate reduction. This is perfect for finishing a meal and impressing guests.
Heat <quantity>1½<unit>cup</unit></quantity> of simple syrup just until it starts to simmer and transfer to a bowl
Peel and thinly slice <quantity>½</quantity> green apple
Transfer to the the hot syrup and let them cool down until the slices are flexible
Add <quantity>2<unit>cups</unit></quantity> of apple juice to a pot over medium heat. Cook for 15-20m until it is reduced to a syrupy texture
Peel and roughly chop <quantity>2</quantity> Errezil apples
Add <quantity>4<unit>tbsp</unit></quantity> of butter and the chopped apple to a pot over medium low heat
Cook, stirring occasionally and pressing with the back of a spoon until you obtain a thick compote
Drain a few slices of the apple in syrup and add them to a paper towel to absorb the excess liquids
Serve a portion of the apple compote in a bowl
Add a portion of the apple juice reduction and top with the apple in syrup. Garnish with edible flowers to taste. The apple three ways is ready
