Fresh or dried, apricot is an incredible fruit that can bring a classic and elegant taste to your desserts. This gel is a perfect way to use apricot and have it always on your shelf.

Apricot Gel

Heat 300ml of water to lukewarm
Cover 180g of dried apricots with the lukewarm water. Allow to rest for 40m to rehydrate
Strain the apricot, place in a saucepan over medium heat and add 25g of sugar
Stir to coat the apricots with the sugar
Add 100ml of water
Mix 25g os sugar with 1tsp of pectin. Add to the apricot
Stir to combine. Cook until the apricots fall apart, stirring occasionally to prevent them from sticking to the bottom of the saucepan
Transfer the apricots to a hand blender jug
Add ½tsp of citric acid powder
Blend to a chunky consistency. The apricot gel is ready
