Aquafaba Mayonnaise
A mayonnaise-like emulsion made with the liquid from cooked chickpeas.
Strain <quantity>30<unit>ml</unit></quantity> of the aquafaba from precooked chickpeas
Add <quantity>2<unit>tsp</unit></quantity> of mustard and salt to taste to a medium bowl
Add the aquafaba and whisk to combine
Add <quantity>200<unit>ml</unit></quantity> of vegetable oil in a thin stream, whisking constantly to emulsify
Add the juice of <quantity>½</quantity> a lime and whisk to incorporate. The aquafaba mayonnaise is ready
