    Trim and peel 500g of arracacha root

  • Step 1

    Dice the arracacha root

  • Step 2

    Melt 2tbsp of butter in a dutch oven. Add the diced arracacha

  • Step 3

    Add 1tbsp of garlic paste and stir to combine

  • Step 4

    Add 3tbsp of water and stir

  • Step 5

    Add 300ml of fresh light cream and stir to coat all the arracacha

  • Step 6

    Cover with a lid and cook over medium-high heat for 30m or until the arracacha is tender

  • Step 7

    Season with salt to taste

  • Step 8

    Mix with a hand blender, while still hot, until you obtain a silky and smooth purée. The arracacha root mousseline is ready

  • Step 9

    Serve it with a nice piece of fish or meat. Enjoy!
