Here, a cartouche is used to cook the artichokes. It's a specific parchment paper folding that will allow the food to cook more evenly. If you don’t know how to make one, it can easily be replaced with a regular lid.

Fill a pan with water and add the peels from 1 lemon
Add salt to taste
Add 2 cleaned artichokes to the pan
Cover the pot with a cartouche or a lid and cook over medium heat for 10m until al dente. The artichokes are cooked
