Asparagus Cleaning & Blanching
A simple and foolproof way to clean and blanch asparagus to give it the perfect texture and a deep and vivid green color. After that, you can finish the asparagus sautéed in butter, grilled, or in any other way you'd like.
Bring a medium pot filled with water to a boil over high heat and add two handfuls of salt
Remove the hardest part of the base of <quantity>8</quantity> asparagus stalks. Scrape off the scales
Make an incision <quantity>1<unit>in</unit></quantity> above the base and peel the end to remove the tough skin
Prepare an ice bath with a handful of salt
Add the clean asparagus to the boiling water and cook for 1m. The stalks should still be crunchy
Transfer the asparagus to the ice bath and let them cool for 2m to stop cooking
The asparagus is clean and blanched, ready to be used in your favorite preparations. Enjoy!
