This vegan mayo avocado aioli is easy, creamy, and versatile! Perfect to be eaten with french fries, as a spread on toast, or as a side dip with fried chicken.
Scoop out 1 avocado into a mixing jug
Add ⅓ cup of chopped coriander, ¼ cup of chopped garlic chives, and 2 small ripped green chillies
Add salt to taste. You can also add any leftover stalks form the herbs
Squeeze the juice out of 1 lime
Mix with a hand blender until completely smooth, while gradually adding 6 tbsp of vegetable oil. The avocado aioli is ready
