A simple recipe for Avocado Purée that can be used as a spread for toasts and sandwiches or as a dip with some crackers.
If you can’t find coriander, use any fresh herb you have available.
You can adjust the acidity to your preferences by adding more or less lime juice. If you want your purée a little smoother just add more extra virgin olive oil.
Ingredients
Avocado
½Lime Juice
1tbspCoriander
6 leavesExtra Virgin Olive Oil

to tasteWater

Add ½ avocado, 6 coriander leaves, 1tbsp of water, and 1tbsp of lime juice to a tall container. Mix with a hand blender until smooth
Add 1tbsp of extra virgin olive oil. Blend until homogeneous and adjust the seasoning with salt to taste. The avocado purée is ready
Spread it on your favorite sandwiches and enjoy!
