
Bacon & Cabbage Dumplings

This dish is ideal to make with friends, as everyone can get involved in folding the dumplings. It's perfect to make in big batches, as it freezes wonderfully.
These dumplings are extremely versatile and can be used steamed, fried, or in broths.
Add 2 tbsp of soy sauce and 2 tbsp of black vinegar to a small bowl
Add 2 tbsp of hot sauce and 2 tbsp of honey
Mix to combine. The dumpling sauce is ready
Add 1 cup of shredded cabbage to a medium bowl
Add ⅓ cup of small diced bacon and ⅔ cup of ground pork
Add 2 tbsp of chopped chives and 1 sliced spring onion bulb
Add 1 minced garlic clove and 1 tsp of brown sugar
Add 1 tbsp of shallot sauce and 2 tbsp of soy sauce
Mix well until combined. The bacon & cabbage filling is ready
Set 30 gyoza wrappers on a board. Wet the edge of a wrapper
Place 1 tsp of the bacon & cabbage filling in the center of the wrapper. Fold the wrapper over the filling and make 5 pleats. Pinch it in the center and press the pleats to shape the gyoza. Repeat for all wrappers
Place a nonstick pan over medium heat
Add 1 tbsp of vegetable oil and coat the pan
Add 5 dumplings to the frying pan
Fry until the bottoms of the dumpling are deep brown and crispy. Add 5 tbsp of water
Cover the pan and reduce the heat to low. Cook for 5m until all the water has evaporated. Repeat the process until all dumplings are cooked
Plate the dumplings with the crispy side visible. The bacon & cabbage dumplings are ready
Dip the dumplings in the sauce and enjoy!
