Plantain Milanese
This recipe may become one of your favorite ways to prepare and eat plantains. It goes well with a variety of dishes or simply as a snack. Give it a try!
Peel and quarter <quantity>4</quantity> ripe plantains
Crack and beat <quantity>3</quantity> eggs
Place <quantity>1<unit>cup</unit></quantity> of all-purpose flour in a wide recipient. Dredge the cut plantains in the flour in batches
Dip the plantains in the beaten eggs, allowing any excess egg to drip off
Place <quantity>2<unit>cups</unit></quantity> of panko in a wide recipient. Coat the plantains with the panko, pressing gently to help the crumbs adhere
Preheat about 1/2 inch of vegetable oil in a skillet over medium heat
Fry the plantains in batches until they are golden brown and crispy, about 2-3m. Turn them and fry until golden and crispy. The plantain milanese is ready
