Bittersweet Coffee Brigadeiro

In this brigadeiro version, you will have the feeling of eating a piece of coffee with sugar, as if you were drinking coffee in a Brazilian bakery, or "padoca" as we call it. I dare you to eat only one!
An all-time Brazilian classic, the brigadeiro is like a truffle that is present in all birthday parties, doesn't matter if you are celebrating a year or a century.

Bittersweet Coffee Brigadeiro

Add 50ml of water and 1tsp of instant coffee to a pan over medium heat. Stir until the coffee is completely dissolved
Add 2 cups of condensed milk and stir to combine
Add ⅓cup of dark chocolate chips
Add 1tbsp of butter and 1tsp of flaky salt
Stir constantly for 15-20m until the mixture starts to thicken and pull away from the bottom of the pan. The brigadeiro will be ready when it starts to drain in a single thick syrup from the spoon, without falling in batches
Transfer to a container and cover with cling film, pressing directly against the surface. Place in the refrigerator for 1h to firm
Place 2tbsp of coarse sugar and 1tsp of instant coffee in a plate
Shape the chilled chocolate mixture into balls and roll them in the sugar and coffee mixture. The bittersweet coffee brigadeiro is ready
