Brazilian Vinaigrette
Vinaigrette is a very popular recipe in Brazil that can be made in many different ways, but always goes well with fatty dishes, especially grilled meats, seafood, some beans or even moqueca. This is a simple version, made with onion, chives and various peppers, seasoned with lots of olive oil and vinegar. The longer you leave it seasoning, the better it will taste!
Trim, peel and small dice <quantity>1</quantity> onion
Transfer to a bowl, add <quantity>1<unit>tbsp</unit></quantity> of extra virgin olive oil and salt to taste
Add <quantity>2<unit>tbsp</unit></quantity> of white wine vinegar and the juice of <quantity>½</quantity> lime
Add <quantity>1½<unit>tbsp</unit></quantity> of thinly sliced chives and <quantity>½<unit>tsp</unit></quantity> of hot sauce
Add <quantity>1</quantity> small habanada pepper thinly sliced, <quantity>1</quantity> small red finger chili thinly sliced and ground black pepper to taste. Mix it to combine
Adjust seasoning if necessary and plate it. The vinaigrette is ready
