Broccolini Warm Salad

A cozy warm salad with tofu, broccolini and spinach cooked to perfection and coated in a umami sauce.
This dish is a delicious combination of textures and flavors.
Works perfectly as a starter, as a side dish, or even as a comfy supper for a cold day.

10mlDark Soy Sauce
120mlVegetable Oil
200mlWhite Vinegar
120mlBlack Pepper

Broccolini Warm Salad

Trim, peel, and roughly chop 1 small onion. Transfer it to a tall container
Add 120ml of white vinegar and 10ml of sesame oil
Add 200ml of vegetable oil and 120ml of dark soy sauce
Add salt to taste and mix with a hand blender until smooth
The onion and sesame sauce is ready
Peel the stems of 1 bunch of broccolini
Cut 70g of tofu into aproximatelly 1.5cm cubes
Add 1tbsp of olive oil to a pan over medium-high heat
Add the tofu and sear it until golden brown
Add ¼cup of the Onion & Sesame Sauce and toss to coat all the tofu
Add the broccolini and coat it in the sauce. Turn the heat down to medium-low
Add 1tbsp of water and stir until the broccolini is cooked but still firm. Remove the broccolini from the pan and reserve
Add 3 cups of picked spinach to the pan
Cook the spinach until it starts to wilt. Plate alongside the tofu
Top with the broccolini
Finish with sesame seeds to taste. The broccolini warm salad is ready
