Broccolini Warm Salad
A cozy warm salad with tofu, broccolini and spinach cooked to perfection and coated in a umami sauce. This dish is a delicious combination of textures and flavors.
Trim, peel, and roughly chop <quantity>1</quantity> small onion. Transfer it to a tall container
Add <quantity>120<unit>ml</unit></quantity> of white vinegar and <quantity>10<unit>ml</unit></quantity> of sesame oil
Add <quantity>200<unit>ml</unit></quantity> of vegetable oil and <quantity>120<unit>ml</unit></quantity> of dark soy sauce
Add salt to taste and mix with a hand blender until smooth
The onion and sesame sauce is ready
Peel the stems of <quantity>1<unit>bunch</unit></quantity> of broccolini
Cut <quantity>70<unit>g</unit></quantity> of tofu into aproximatelly <quantity>1.5<unit>cm</unit></quantity> cubes
Add <quantity>1<unit>tbsp</unit></quantity> of olive oil to a pan over medium-high heat
Add the tofu and sear it until golden brown
Add <quantity>¼<unit>cup</unit></quantity> of the Onion & Sesame Sauce and toss to coat all the tofu
Add the broccolini and coat it in the sauce. Turn the heat down to medium-low
Add <quantity>1<unit>tbsp</unit></quantity> of water and stir until the broccolini is cooked but still firm. Remove the broccolini from the pan and reserve
Add <quantity>3<unit>cups</unit></quantity> of picked spinach to the pan
Cook the spinach until it starts to wilt. Plate alongside the tofu
Top with the broccolini
Finish with sesame seeds to taste. The broccolini warm salad is ready
