
Carrot Purée

A flavorful and versatile purée with vibrant color. It pairs really well with grilled or roasted meats.
Peel, trim, and finely slice 2 medium carrots. You can use a mandolin if available
Squeeze and strain the juice from 1 large orange
Finely grate 1 thumb of ginger over a piece of cloth. Use the cloth to squeeze the juice out of the grated ginger and discard the solids
Add the sliced carrot and the ginger juice to a medium saucepan
Add the orange juice and 1 tbsp of butter
Add salt to taste and stir to combine
Cover the pan and cook over low heat, checking eventualy, until the carrots are soft
Transfer the mixture to a blender and blend until smooth. The carrot purée is ready
