Cassava Rosti & Egg
This Cassava Rosti & Egg is perfect for breakfast, lunch, dinner, or even as a midday snack! It's a delicious way to incorporate this superfood into your meals. Eat it as shown or top it with your other favorite proteins and condiments!
Here, we use red chili flakes and chili oils as a garnish, but you can play with different combinations of sauces and seasonings such as salsas, sesame seeds, garlic chips, etc.
Trim and peel 1 small cassava root
Coarsely grate the cassava and transfer it to a bowl
Thinly slice 1 small onion and add it to the bowl
Coarsely chop 1 small bunch of coriander and add it to the bowl
Coarsely chop 1 small bunch of chives and transfer it to the bowl
Season with salt and black pepper to taste. Mix to incorporate
Melt 1 tbsp of butter in a non-stick pan over medium heat. Add the seasoned cassava and spread it around. Cook until both sides are brown, keeping the round shape of the pan. Transfer to a plate
Melt 1 tbsp of butter in the same pan and crack 2 eggs on top of it. Fry until the whites firm up and start to turn brown on the edges. Place it on top of the rosti
Sprinkle red chili flakes and drizzle chili oil to taste on top of it. The cassava rosti & egg is ready
