Cheese & Green Bean Jiǎozi
Delicius steamed dumplings filled with comté cheese and green beans. Dip them in the sauce of your choice and you will have the perfect snack or starter!
Add <quantity>250<unit>g</unit></quantity> all-purpose flour, <quantity>2<unit>g</unit></quantity> of salt, and <quantity>125<unit>g</unit></quantity> of water to a bowl
Mix to combine the ingredients
Knead by hand until you obtain a uniform dough
Cover and let rest for 5m to hydrate the flour and make the dough more uniform
Knead the dough until perfectly smooth
Cover the dough and let it rest fo 30m to relax the gluten and make it easier to roll
Trim and remove the fiber from <quantity>2<unit>cups</unit></quantity> of green beans
Cut the beans diagonally as fine as possible
Add <quantity>3<unit>tbsp</unit></quantity> of vegetable oil to a heated skillet. Stir-fry the beans until tender but slightly al dente
Transfer the green beans to a bowl and let them cool down
Season the green beans with black pepper, nutmeg, and flaky salt to taste
Add <quantity>⅔<unit>cup</unit></quantity> of grated Comté cheese to the beans and mix to combine. The cheese & green beans jiǎozi filling is ready
Place the dough on a floured surface and cut it in half
Shape each half into a cilinder with <quantity>2<unit>cm</unit></quantity> diameter
Trim the edges and cut it into <quantity>15</quantity> equal parts, rotating the cilinder 90° after each cut. Repeat with the other half of the dough
Flatten each piece lightly with the palm of your hand keeping them as round as possible. Sprinkle a bit of flour if it sticks to your hand
Sprinkle the dough pieces with flour and roll them out with a rolling pin until they are the size of the palm of your hand. Keep the center slightly thicker than the edges
Fill a large pot with water and bring to a boil over high heat
Place a piece of dough on the fingers of your non-dominant hand and add a portion of the filling
Fold the dough and lightly press the edges to close it
Use your index fingers and thumbs to seal the dough and push the filling to the center of the dumpling. Place them on a lightly floured plate
Place the dumplings in the boiling water and cook until they float and slightly puff up
Drain them. The cheese & green bean jiǎozi is ready
