Mince <quantity>2<unit>tbsp</unit></quantity> of pickles. Transfer them to a mixing container
Add <quantity>2<unit>tbsp</unit></quantity> of mayonnaise
Add <quantity>1<unit>tbsp</unit></quantity> of ketchup and <quantity>1<unit>tbsp</unit></quantity> of mustard
Mix with a spoon to incorporate all the ingredients
Add cayenne powder and worcestershire sauce to taste
Season with salt and black pepper to taste and mix evenly. Set aside
Slice <quantity>¼</quantity> of a red onion into <quantity>½<unit>cm</unit></quantity> thick slices on a mandoline
Cut <quantity>4</quantity> potato buns in half
Mix <quantity>180<unit>g</unit></quantity> of ground brisket, <quantity>180<unit>g</unit></quantity> of ground chuck and <quantity>180<unit>g</unit></quantity> ground short rib. Form <quantity>4</quantity> <quantity>135<unit>g</unit></quantity> balls
Toast the insides of the buns on a heated pan over low heat. Reserve
Place the burgers on the heated pan over medium-high heat and press flat
Season generously with flaky salt and ground pepper. Sear the meat until dark brown
Flip each burger and top with <quantity>1<unit>slice</unit></quantity> of cheddar cheese. Add more ground pepper to taste and cook until the cheese is melted
Place the patties on the toasted bottom buns
Top with red onion and pickled cucumbers to taste
Put <quantity>1<unit>tbsp</unit></quantity> of the burger sauce on each top bun and place on top of the burger. The cheeseburger is ready
