This sour Cherry Vareniki is a Ukrainian classic dumpling recipe.
Tender dough, perfectly combined with a sour cherry filling, creates a perfect blend of flavors.
Serve it warm with sour cream.
Sift 1½ cup of all-purpose flour into a mixing bowl
Add ½ tsp of salt. Make a well in the center and add 1 egg yolk
Add 2 tbsp of sunflower oil and ½ cup of hot water
Gradually mix the flour with the wet ingredients until you obtain a soft and pliable dough
Knead the dough to form a ball and wrap it in cling film
Place the dough in the refrigerator for 1h to relax. The vareniki dough is ready
Place 70 g of white sugar and 40 g of cornstarch in a bowl. Mix
Add 300 g of defrosted sour cherries. Mix to combine and let it rest for 20m to marinate
Strain the cherries liquid into a saucepan over medium-low heat
Cook and mix constantly until it thickens. Remove from heat
Add the drained cherries and mix to meld together. The sour cherry filling is ready
Dust a clean work surface with flour and place the Vareniki Dough on it
Roll out the dough until it is 3 mm thick
Punch it with a round cutter
Place a 1 tsp of the Sour Cherry Filling. Fold the dough and pinch the edges to seal the vareniki
Fill half of a large pot with water and bring to a boil. Add ½ tsp of salt
Carefully place the dumplings into the boiling water and simmer for 4m until cooked
Transfer the vareniki to a bowl and add ½ tbsp of butter. Toss to coat them evenly
Plate the dumplings and pour sour cream to taste over them. The cherry vareniki are ready
