
Chervil Salad

This crisp and fragrant salad is perfect as a fresh side. Try it as an addition to a fried calamari sandwich.
Chervil originated in the Caucasus, but is now grown throughout the world. Sometimes referred to as French Parsley, it has a long-standing tradition in French cuisine. It is used primarily in delicate applications and is one of the four traditional fines herbs, which also include chives, tarragon, and parsley.
Slice ½ of the white part of a leek on a mandoline very thinly. Place in a small bowl
Add 2 tbsp of red wine vinegar
Add salt and black pepper to taste
Pick the leaves from ½ bunch of chervil
Add the chervil to the bowl
Add ½ tbsp of olive oil and mix. The Chervil Salad is ready
