A perfect marinade for duck legs, quail, chicken, turkey, or any type of poultry, really.
Chintextle paste is one of the more well-known seasonings from the Oaxaca region of Mexico. It is a smoked chili paste. Its ingredients can vary slightly, but they generally include pasilla chilis, avocado leaves, dried shrimps, pumpkin seeds, garlic, oil, vinegar, and salt.
Add 6 small garlic cloves, ½ cup of chintextle paste and ½ cup of honey to a blender
Add 3 tbsp of salt and 2 cups of orange juice
Add 1 cup of vegetable oil
Blend on high speed until smooth
The chintextle marinade is ready
It goes really well with any kind of poultry, especially with the skin on!
