
Chocolate Chip Cookies

An all-time favorite, this recipe will produce a soft cookie, with an amazing texture!
The crispy edge and soft center makes all the difference and will impress your friends and family! They are delicious eaten as is, dipped in milk, or made into ice cream sandwiches.
A great chef who I worked with at The French Laundry passed down this chocolate chip recipe to me when we were chef de parties together. I normally don’t place great importance on keeping recipes secret, as knowledge is meant to be shared, but for some reason I have with this one. I think it's because that chef is so special to me. But now it's time to share this recipe.
Add 1 cup softened butter to the stand mixer with a paddle attachment
Add 1¾ cups packed brown sugar
Cream the butter and sugar at medium speed
Add 2 eggs
Add 1 tbsp vanilla paste, and mix until fully incorporated
Add 2½ cups all-purpose flour
Add 1½ tsp salt
Add 1 tsp baking soda
Mix the dough on low speed until it comes together
If necessary, chop 3¼ cups of chocolate chips into bite-size pieces
Add the chocolate chips to bowl, and mix until they are evenly distributed in the dough
Use a spoon to make balls of dough that are about 57 g each
Place in airtight container and chill for 30m until it stiffens
Preheat the oven to 325 ºF
Place the chilled dough about 5 cm apart on a sheet tray lined with parchment paper and flatten them slightly. Bake for 8m
Rotate the tray and bake the cookies for an additional 3m until they start to turn golden brown on the edges
Remove the cookies from the oven and allow them to finish cooking on the hot tray for 3m. The cookies are now ready
