Chocolate Cookies
Super easy and fast to make, it can't get any better than this. Try them and you'll be convinced too!
Add <quantity>125<unit>g</unit></quantity> of 50% cocoa chocolate and <quantity>25<unit>g</unit></quantity> of butter to a medium pan
Melt the chocolate and the butter over low heat, mixing with a spatula
Add <quantity>70<unit>g</unit></quantity> of sugar and <quantity>1</quantity> egg to a bowl. Beat until fluffy and doubled in volume
Carefully fold the egg mix into the melted chocolate mix in small batches
Add <quantity>30<unit>g</unit></quantity> of flour and <quantity>¼<unit>tsp</unit></quantity> of baking powder. Fold until combined
Cut <quantity>125<unit>g</unit></quantity> of 50% cocoa chocolate into chunks and add to the mixture
Add <quantity>½<unit>tsp</unit></quantity> of flaky salt and mix to combine
Transfer the dough to a clean bowl, cover and place it in the refrigerator for 30m
Preheat the oven to <temperature>180<unit>°C</unit></temperature>
Remove the dough from the refrigerator
Make 12 small balls using a tablespoon. Place them on a tray lined with parchment paper. Sprinkle flaky salt to taste on each ball
Bake for 9m until they start to turn golden brown on the edges. The chocolate cookies are ready
