Chocolate Cookies
Runa Kvendseth
Add 125g of 50% cocoa chocolate and 25g of butter to a medium pan
Melt the chocolate and the butter over low heat, mixing with a spatula
Add 70g of sugar and 1 egg to a bowl. Beat until fluffy and doubled in volume
Carefully fold the egg mix into the melted chocolate mix in small batches
Add 30g of flour and ¼tsp of baking powder. Fold until combined
Cut 125g of 50% cocoa chocolate into chunks and add to the mixture
Add ½tsp of flaky salt and mix to combine
Transfer the dough to a clean bowl, cover and place it in the refrigerator for 30m
Preheat the oven to 180°C
Remove the dough from the refrigerator
Make 12 small balls using a tablespoon. Place them on a tray lined with parchment paper. Sprinkle flaky salt to taste on each ball
Bake for 9m until they start to turn golden brown on the edges. The chocolate cookies are ready
