
Clams with Lovage Sauce

This dish is the perfect starter for when you have friends over. Everybody has a nice time and it's super easy and fast, so you can sit along with your friends. Win-win situation.
Pair it with some bread or toast and it's perfect!
Trim, peel, and small dice 1 shallot
Peel and smash 1 garlic clove
Thinly slice 2 spring onions
Pick 3 sprigs of lovage. Thinly slice and keep the leaves and stems separated
Add 1 tbsp of extra virgin olive oil to a saucepan over medium heat
Add the chopped shallot, lovage stems, smashed garlic, and 1 cardamom pod
Add 2 kaffir lime leaves and stir until the shallot starts to lightly brown
Add 1 kg of medium clams
Add black pepper and red chili flakes to taste and stir to combine
Add 2 tbsp of butter and stir
Add 3 tbsp of white verjus
Add 1¼ cup of coconut milk and let it simmer for 4m until the clams open
Add the lovage leaves and combine. Adjust seasoning with salt to taste
Transfer the clams to a serving bowl and spoon sauce over them. Top with more lovage leaves, scallions, and lime to taste. The clams with lovage sauce are ready
