Coconut Milk Kefir
Coconut milk fermented with kefir culture. If you are vegan or like kefir then this recipe is for you. It pairs perfectly with sweet fruit, granola and savoury dishes such as baked potatoes. This is also a good base to make fermented vegan cheese, like feta or ricotta.
Add <quantity>1<unit>L</unit></quantity> of coconut milk to a sterilized jar
Add <quantity>10<unit>g</unit></quantity> of kefir culture. Stir gently to incorporate
Cover the jar with a piece of cloth and tie with a string. Ferment for 2d at room temperature
Once properly fermented it should look like this
Strain to remove the kefir culture
Rinse the kefir culture and store in a jar with syrup made from <quantity>25<unit>g</unit></quantity> of sugar dissolved in <quantity>50<unit>ml</unit></quantity> of water. This will sustain the kefir culture until your next batch
