Countryside Omelet
A fluffy omelet made with fresh eggs, butter, and olive oil. Slightly golden on the outside and soft on the inside, it’s perfect with a side of greens and crusty bread—or atop some fried rice.
Crack <quantity>2</quantity> eggs into a bowl and add salt to taste
Whisk the eggs vigorously for 30s until whites and yolks are fully combined
Add <quantity>½<unit>tbsp</unit></quantity> of butter and <quantity>½<unit>tbsp</unit></quantity> of olive oil to a skillet over low heat. Let the butter melt
Pour the eggs into the skillet and stir gently to begin heating
Push the curds to one side and when the eggs are partially set and runny, turn off the heat. Spread the runny part over the entire surface of the skillet
With the eggs still runny, remove the skillet from heat and fold the omelet with the help of a spatula, leaning the skillet to help
Roll the omelet onto a plate and serve with a drizzle of extra virgin olive oil and black pepper to taste. The countryside omelet is ready
