Crab Cleaning & Cooking
This is the basic skill for cooking raw crab. After cooking, it can be used for salads, sauces, or snacks. Brown crab is exotic, but it is also widely available in the Nordic countries. For this technique, it can be replaced with other crab species. Preparing it is easy, but brings great results and is a great way to impress your friends and family.
Fill a large pot with water and bring to a boil over high heat
Turn the heat down to medium-low and add salt to taste. Let it simmer
Add <quantity>4</quantity> brown crabs
Simmer for 18-20m until the shells start to turn orange and the crabs are fully cooked
Prepare a large ice bath
Transfer the crabs directly to the ice bath to stop the cooking
Twist and pull the claws to remove them
Crack the claws in the intersections using a nutcracker. Be careful not to damage the meat
Remove the meat from the claws using kitchen tweezers or a small spoon
Pull the abdomen with your hands to separate it from the shell
Gently remove the gills, the yellow organs, and the darker membrane right beneath the abdomen. Discard these pieces and pick the light meat
Transfer the meat to a dish. The crab is cooked and cleaned
