These versatile crêpes are a great option for breakfast or for a snack. Choose your favorite sweet or savory topping and fillings—they are great with vegetable creams, cheese spreads, or jams—and enjoy!
Add <quantity>500<unit>g</unit></quantity> of all-purpose flour to a bowl
Add <quantity>1.2<unit>l</unit></quantity> of whole milk. Whisk continuously to incorporate the flour
Add <quantity>1</quantity> egg
Add <quantity>1<unit>tsp</unit></quantity> of salt and <quantity>1<unit>pinch</unit></quantity> of baking soda. Whisk thoroughly to obtain a thin, smooth batter
Let the batter rest for 20m until it starts to bubble
Warm a flat non-stick pan over medium heat and grease it with butter
Add enough batter to form a thin layer. Lift the pan off the heat, tilting it in a circular motion to spread the batter into an even circle. Cook for 1m until the top is set and the bottom is light brown
Loosen the edges with a spatula and flip the dough. Cook for 30s and remove from the heat. Repeat with the remaining batter, greasing the pan again if it starts to stick. The crêpe is ready
