Crispy Vegetables with Miso Sauce
Crispy and tender fried vegetables seasoned with an umami packed, aromatic miso sauce.
Cut <quantity>200<unit>g</unit></quantity> of organic roma tomatoes in medium size pieces
Peel <quantity>1</quantity> garlic clove and add to tomatoes
Transfer ingredients to sterilized jar
Add <quantity>¼<unit>tbsp</unit></quantity> of salt
Press ingredients until tomato juice is released
Seal jar and shake to combine. Store in a dry, ventilated place at room temperature for 3d until tomatoes develop added umami and tanginess
Blend fermented tomato mix on medium speed until liquified. The Fermented Tomatoes are ready
Add <quantity>¼<unit>cup</unit></quantity> of dark soy sauce to a bowl
Add <quantity>1½<unit>tbsp</unit></quantity> of sake
Add <quantity>4<unit>tbsp</unit></quantity> of tahini
Add <quantity>¾<unit>cup</unit></quantity> of water
Add <quantity>¼<unit>cup</unit></quantity> of miso
Add <quantity>3<unit>tbsp</unit></quantity> of chopped ginger
Add <quantity>2<unit>tbsp</unit></quantity> of chopped lemongrass
Add <quantity>8<unit>tsp</unit></quantity> of brown sugar
Mix well to combine
Cook over medium heat until it boils. Remove from heat
Blend sauce on high for 2m and strain through a fine mesh sieve. Reserve in refrigerator
Cut <quantity>½</quantity> of an eggplant into <quantity>2.5<unit>cm</unit></quantity> cubes
Trim stems from <quantity>½<unit>bunch</unit></quantity> of broccoli and cut into large pieces
Cut <quantity>1</quantity> carrot in half lengthwise
Season vegetables with Fermented Tomato and marinate for 10m to infuse the flavors
Squeeze vegetables of excess marinade and transfer to another bowl
Add <quantity>½<unit>cup</unit></quantity> of potato starch and dredge vegetables
Heat <quantity>1<unit>L</unit></quantity> of vegetable oil to <temperature>150<unit>ºC</unit></temperature>
Fry the dredged vegetables for 3m. Remove and drain on paper towel
Transfer fried vegetables to a serving plate
Add <quantity>2<unit>tbsp</unit></quantity> of miso sauce
Add <quantity>1<unit>tsp</unit></quantity> of toasted sesame seeds
Add <quantity>2<unit>tbps</unit></quantity> of thinly sliced spring onion
