
Crispy Wings & Sweet Chili

Korean inspired fried chicken wings with sweet chili sauce. Use your hands!
South Korea has a large street food culture, that's where the inspiration for this dish comes from.
Add 2 tbsp of lemon juice to a bowl containing 500 ml of milk
Add 3 tbsp of rice wine vinegar
Add 1 tsp of salt and ½ tsp of ground black pepper
Stir to combine
Add 500 g of trimmed chicken wings to marinade
Marinate chicken wings in the fridge for 60m to tenderize
Add 2 tbsp of dark soy sauce to bowl
Add 4 tbsp of ketchup
Add 2 tbsp of sambal oelek sauce
Add 1 tsp of toasted sesame oil
Add 3 tbsp of honey
Add 2 tbsp of palm sugar
Add 2 stalks of minced coriander with root
Add 1 tbsp of minced ginger
Add 1 tbsp of minced garlic
Add 1 tbsp of gochugaru pepper
Whisk to combine
Transfer to a pot on medium heat and cook for 5m to dissolve the sugar. The Sweet Chili Sauce is ready
Remove wings and pat dry
Heat 1 L of vegetable oil in a pot over medium heat
Fry chicken wings until golden brown
Crispy Chicken Wings are ready
Add warm Sweet Chili Sauce to Crispy Chicken Wings. Mix to evenly dress chicken wings
Transfer dressed wings to serving board
Sprinkle 1 tsp of white and black sesame seeds
Garnish with 2 tbsp of finely sliced scallion tops
