Cucumber & Chili-Miso
Crunchy cucumber with red pepper miso makes for a quick, easy, and delicious side dish! The harmony and richness of the miso, and the freshness of the cucumber are addictive. It goes well with beer, sake, or wine.
Cut <quantity>1</quantity> small dried red chili pepper into very small pieces with a pair of scissors
Add <quantity>6<unit>tbsp</unit></quantity> of miso and <quantity>3<unit>tbsp</unit></quantity> of sugar to a saucepan
Add <quantity>2<unit>tsp</unit></quantity> of mirin and <quantity>2<unit>tsp</unit></quantity> of sake
Add the chili and mix until incorporated
Place the saucepan over medium-low heat and stir for 5m. Turn off the heat when it starts to bubble
Add <quantity>3<unit>tbsp</unit></quantity> of white sesame seeds and mix. The chili-miso is ready
Trim both ends of <quantity>1</quantity> Japanese cucumber. Thinly slice halfway through the cucumber on a diagonal. Flip it and repeat the cuts on the other side
Cut the cucumber into <quantity>3<unit>cm</unit></quantity> pieces
Fill a medium bowl with water, add <quantity>2<unit>tbsp</unit></quantity> of salt and stir to dissolve. Add the cucumber and soak for 10m to season
Drain the cucumber and dry with a clean cloth. Put into a dry bowl
Add <quantity>1<unit>tbsp</unit></quantity> of the Chili-Miso, and mix to fully coat the cucumber pieces
Plate the seasoned cucumber and sprinkle white sesame seeds to taste on top. The cucumber & chili-miso is ready
