Dulcey Chocolate Crémeux
Dulcey Chocolate Crémeux is a dessert component made with Valrhona Dulcey chocolate, which is a unique caramelized white chocolate. The crémeux is a smooth and creamy custard-like preparation, made by combining Dulcey chocolate, cream, egg yolks, and sugar. This crémeux can be served as a standalone dessert, as part of a multi-layered cake, or as a filling for pastries.
Soak 3 gold gelatin leaves in a bowl with cold water and hydrate them according to the manufacturer’s instructions
Combine 250g of cream and 250g of milk in a pot over low heat
Add 70g of egg yolks. Whisk and stir the mixture constantly while heating it up
Remove from the heat once the temperature reaches 85°C
Add the pre-soaked gelatins and whisk until it melts
Incorporate 220g of Dulcey chocolate and mix until it's well combined
Combine until homogeneous and refrigerate for 4h to set. The Dulcey chocolate crémeux is ready
