French Fries
The ultimate side dish! Everyone loves French Fries, and here we will go through how to make them yourself. These can be served as a side dish or by themselves with mayonnaise or ketchup.
Peel <quantity>1<unit>Kg</unit></quantity> of floury potatoes and cut them into <quantity>1<unit>cm</unit></quantity> thick batons
Rinse the potatoes in cold water until it runs clear. Soak them in water for 30m or up to 1d in the refrigerator
Pat dry the potatoes
Fill a heavy bottom pot or deep fryer halfway with vegetable oil. Preheat to <temperature>130<unit>°C</unit></temperature>
Gently dip the potatoes into the oil and fry until lightly golden, working in batches if necessary. Transfer the fries to a wire rack with a slotted spoon and let them cool down
Heat the oil to <temperature>180<unit>°C</unit></temperature>. Return the fries to the pot and fry until golden and crisp. Drain on paper towels
Season generously with salt while the fries are still hot
