Peel 1 Kg of floury potatoes and cut them into 1 cm thick batons
Rinse the potatoes in cold water until it runs clear. Soak them in water for 30m or up to 1d in the refrigerator
Pat dry the potatoes
Fill a heavy bottom pot or deep fryer halfway with vegetable oil. Preheat to 130 °C
Gently dip the potatoes into the oil and fry until lightly golden, working in batches if necessary. Transfer the fries to a wire rack with a slotted spoon and let them cool down
Heat the oil to 180 °C. Return the fries to the pot and fry until golden and crisp. Drain on paper towels
Season generously with salt while the fries are still hot
The french fries are ready. Enjoy!
