
Fried Pão de Queijo

Easy recipe to make and very social. It will please everyone, from the gourmets to the lovers of good food with cheesy flavour.
Very traditional recipe from my grandmother's region. It is a very nostalgic recipe that reminds me of my childhood and of a time that has passed.
Place 250 g of sour tapioca starch and 250 g of sweet tapioca starch in a large mixing bowl
Add 4 g of flaky salt and 2 g of black pepper powder
Add 200 g of grated comté cheese and 300 g of grated emmental cheese. Mix all of the ingredients
Make a well in the center of the bowl. Crack 2 eggs
Add 150 ml of water and 150 ml of vegetable oil to a hot pan on high heat
Add 150 g of milk. Bring liquid to a boil
Pour the liquid around the edge of the mixing bowl. Be careful not to cook the eggs
Wait 2m for the liquid to cool. Mix the dough vigorously with your hands, working from the inside of the bowl, outwards
Form balls about the size of a tablespoon
Heat half a saucepan with vegetable oil to 180 °C
Submerge the dough balls in the oil and fry them until golden brown. Take them out and drain them on a paper towel
Enjoy the fried pão de queijo! It can be eaten on its own or with your favorite sauce or dressing!
