Ganmodoki
Ganmodoki are delicious Japanese fried tofu patties. They're made from yams, tofu, and whatever leftover vegetables you have in the fridge. You can pair them with many sauces and dips, such as sriracha or mayonnaise. It's really up to you! They're easy to make and the process takes about 30 minutes. Place them in the freezer, thaw overnight and fry again for perfect results.
Mash <quantity>1</quantity> medium cooked and peeled yam in a suribachi bowl
Add <quantity>400<unit>g</unit></quantity> of drained firm tofu to the bowl
Using a surikogi, pound the tofu with circular movements until you get a creamy texture
Add <quantity>¼<unit>cup</unit></quantity> of chopped scallions, <quantity>½<unit>cup</unit></quantity> of small diced cooked potatom and <quantity>½<unit>cup</unit></quantity> of small diced carrot. Mix to combine
Add <quantity>3<unit>tbsp</unit></quantity> of cooked and chopped green beans. Squeeze the juice of <quantity>1<unit>tbsp</unit></quantity> of grated ginger and mix to combine
Add <quantity>1<unit>tsp</unit></quantity> of sesame oil, <quantity>1<unit>tsp</unit></quantity> of soy sauce, and <quantity>1<unit>tsp</unit></quantity> of mirin. Mix to combine
Form patties using a spoon and lightly moistened hands. Place them on a tray lined with parchment paper
Preheat <quantity>1<unit>L</unit></quantity> of vegetable oil to <temperature>180<unit>°C</unit></temperature>
Coat the patties in all-purpose flour
Fry the patties in small batches until golden and crispy. Transfer to a tray lined with paper towel to drain. The ganmodoki is ready
Top the ganmodoki with your favorite sauce and enjoy!
