Garlic Bread Pizza is an invention where we transformed the garlic bread to a delicious pizza!
Perfect as an appetizer for a dinner party or to serve on a pizza night.
Even though garlic bread is popular around the world, the inspiration for this pizza was definitely from the Brazilian barbecue. An ultimate classic!
All the ingredients can be replaced according to what you have available. That means you can use margarine instead of butter, and different kinds of cheese, garlic, and herbs.

Garlic Bread Pizza

Add 300ml of room temperature water and 12g of salt to a bowl. Mix until dissolved
Add 450g of all-purpose flour and mix with a spoon until the flour is almost absorbed
Add 2g of dry yeast and 50g of all-purpose flour. Mix to incorporate the yeast
Place the dough on a clean, floured surface and knead for 10m to develop the gluten. Dust with flour as needed to avoid sticking. Make a ball with the dough
Grease a bowl and the dough with olive oil. Cover with a damp cloth. Let it rest at room temperature for 12h to rise
Divide the dough in three pieces of approximately 250g. Form a ball with each piece
Grease containers with olive oil and put the dough in. Cover with cling film and let it rest at room temperature for 12h to rise
The pizza dough is ready
Preheat a cast iron skillet on the highest temperature of your oven
Peel 8 garlic cloves
Roughly chop ½bunch of parsley
Drizzle extra virgin olive oil to taste around the skillet and add the garlic cloves
Add salt and black pepper to taste
Roast the garlic cloves for 5-10m until golden brown
Flip the garlic cloves side and drizzle extra virgin olive oil to taste on top
Roast the garlic cloves for 5-10m until golden brown and tender
Transfer the roasted garlic to a mortar and pestle, and add 2tbsp of butter
Add 2tbsp of grated parmesan cheese and the chopped parsley to taste
Add 2tbsp of extra virgin olive oil and grind into a chunky paste
Season with salt and black pepper to taste. The garlic & cheese butter is ready
Dust a working surface with flour and place the dough on top of it
Gently press the dough to start opening it. Make a circle with it by rotating in the air. Be careful to preserve the air bubbles at the edges
Dust a pizza peel or a pizza baking tray with flour. Place the opened pizza dough over it
Add 1 cup of grated mozzarella. Drizzle with the Garlic & Cheese Butter to taste over it
Add grated parmesan cheese and chopped parsley to taste
Add black pepper and extra virgin olive oil to taste
Bake the pizza for 6m, turning it every 2m until the cheese is completely melted and the dough is blistered. The garlic bread pizza is ready
