Garlic & Cheese Butter
A new take on the garlic butter from the traditional garlic bread, present in most Brazilian barbecues! Perfect to spread over a toast or use as a dipping sauce!
Preheat a cast iron skillet on the highest temperature of your oven
Peel <quantity>8</quantity> garlic cloves
Roughly chop <quantity>½<unit>bunch</unit></quantity> of parsley
Drizzle extra virgin olive oil to taste around the skillet and add the garlic cloves
Add salt and black pepper to taste
Roast the garlic cloves for 5-10m until golden brown
Flip the garlic cloves side and drizzle extra virgin olive oil to taste on top
Roast the garlic cloves for 5-10m until golden brown and tender
Transfer the roasted garlic to a mortar and pestle, and add <quantity>2<unit>tbsp</unit></quantity> of butter
Add <quantity>2<unit>tbsp</unit></quantity> of grated parmesan cheese and the chopped parsley to taste
Add <quantity>2<unit>tbsp</unit></quantity> of extra virgin olive oil and grind into a chunky paste
Season with salt and black pepper to taste. The garlic & cheese butter is ready
