Gastrique
This liquid serves as a base for making any kind of pickle! Choose your ingredient and go for it. Here we used white wine vinegar and adjuma pepper, but you can also use red wine vinegar and the chili peppers you have in hand.
Add <quantity>1<unit>cup</unit></quantity> of white wine vinegar and <quantity>1<unit>cup</unit></quantity> of sugar to a saucepan over high heat
Add <quantity>2<unit>cups</unit></quantity> of water and <quantity>1</quantity> chili pepper cut in half
Add a pinch of salt and stir to combine and dissolve the sugar. Bring it to a boil and remove from heat. The gastrique is ready
Use it to pickle cucumbers, onions, cabbages, or whatever you like!
