This is an extremely versatile syrup that'll boost a number of cocktails and mocktails with a variety of flavor profiles. After blending the ginger, just make sure to keep the proportion of 2 parts of sugar for 1 part of ginger extract for the perfect balance of sweetness and freshness.
Roughly chop 100g of peeled ginger
Add it to a blender and add 45ml of water
Blend on high speed until completely crushed
Sieve into a container through a fine mesh sieve
Add 2½tbsp of the sieved ginger extract and 5tbsp of sugar the blender
Blend until the sugar is dissolved. The ginger syrup is ready
Enjoy it with cocktails and mocktails!
