
Gorgonzola Burger

A burger that combines the power of gorgonzola cheese, the smokiness and crunchiness of bacon, and the natural sweetness of caramelized onions.
Make the patty from scratch, sear it, cover with cheese and that's it: a juicy and tasty burger that will impress friends and family!
Trim, halve, and peel 3 onions. Cut them into thin half-moon slices
Add 2 tsp of vegetable oil and 3 tbsp of butter to a pan over medium heat and melt it
Add the onions and stir until they start to golden
Add salt to taste and continue to cook, stirring occasionally, until golden brown. The caramelized onions are ready
Cut 2 slices of gorgonzola cheese
Cut 320 g of brisket into medium cubes
Place the meat in a bowl
Cut 320 g chuck into medium cubes
Add the chuck to the brisket and mix by hand
Grind the meat
Divide the meat into 160 g balls
Press to shape the burger
Add 150 g of sliced bacon to a frying pan
Cover with 100 ml of water and place over medium heat
Flip the bacon until both sides are golden and crispy. Remove from the frying pan. The crispy bacon is ready
Halve 1 potato bun and spread 1 tsp of butter on both halves
Sear the bread
Add 1 tbsp of vegetable oil to a heated skillet
Season the patty with salt and black pepper to taste. Place it in the skillet
Press the patty with a grill weight and cook for 3m until seared
Flip the patty and cook with a weight for 2m to sear
Add the gorgonzola slices over the patty and cover with a lid or a burger steamer for 1m to melt the cheese
Place the burger on the bottom bun and add the Crispy Bacon to taste
Add a 1 tbsp of the Caramelized Onions. The gorgonzola burger is ready
