Grilled Rustic Sourdough Toast
This Italian-style toast brings anything it touches to the next level with ease and simplicity. Rustic whole grain sourdough grilled to perfection with an outstanding level of flavor to elevate your favorite bruschetta or toast applications. Makes an excellent quick dinner when topped with your favorite beans or stew. This bread sops up pan juices magnificently alongside grilled meats.
I first learned to grill toast this way while working at The Spotted Pig under Chef April Bloomfield, who trained at The River Cafe. It is a classic Italian-style toast Nonnas from all over have served for hundreds of years.
Preheat a grill to medium-high heat. If using charcoal or wood, prepare well in advance
Slice a loaf of sourdough bread into 3 cm thick pieces
Place the sliced bread on the hot grill. Flip it until it has nice markings and a deep amber color
Remove the bread from the grill. Rub one garlic clove on one or both sides of each slice
Drizzle with extra virgin olive oil and finish with sea salt to taste. The grilled rustic sourdough toast is ready
