
Heart of Palm Croquette

It's a no-brainer; easy to grab, easy to eat. The warm, gooey and crispy party favorite that keeps on popping!
The Heart of Palm Croquette is a great appetizer to make whenever you have friends coming over and want something flavorful to eat while sipping some cocktails, or if you’re just craving a delicious fried snack! Serve it with an aioli or homemade ketchup, and you’ll be set.
A modern take using a traditional Brazilian ingredient, heart of palm.
Cut 100 g of brie cheese into 1 cm cubes
Add 2 tbsp of butter to a pot on low heat
Add 2 tbsp of chopped onions
Add 3 cups of diced hearts of palm
Add salt and pepper to taste. Stir to combine
Cover and cook for 20m, until tender
Uncover and raise heat to medium
Add 2 tbsp of all-purpose flour and stir to coat hearts of palm
Slowly add 1½ cups of milk. Stir to incorporate. Cook 10m while stirring, until thickened
Add 5 tbsp of grated parmesan cheese
Zest ½ lemon
Add 3 tbsp of chopped chives
Turn heat off and remove croquette dough from pot
Chill for 1h until croquette dough is firm
Crack and beat 2 eggs. Season with salt and pepper to taste
Add ¼ cup of milk and stir to combine
Grease your hand with extra virgin olive oil, take 2 tbsp of croquette dough and roll it. Make a small hole in the center
Place 1 cheese cube into dough and cover to form the croquette. Fill remaining pieces of croquette dough
Dredge croquettes in 2 cups of all-purpose flour
Coat croquettes in egg mixture
Dredge croquettes in 2 cups of breadcrumbs. Reserve
Heat 2 L of vegetable oil to 175 °C on medium heat
Deep fry croquettes until golden brown. Remove and drain on paper towels
Transfer croquettes to serving plate with brown paper
Grate 2 tbsp of parmesan cheese
Zest ½ lemon
