Hemp Seed Chutney
In the hilly, northern state of Uttarakhand, where I come from, Hemp Seed Chutney is a traditional accompaniment served during mealtimes, and you’ll be hard pressed to find it in other parts of the country. Feel free to adjust the consistency to your preference. It's great with fresh made flatbreads!
Toast <quantity>1<unit>tbsp</unit></quantity> of cumin seeds on a skillet over low heat until fragrant
Add <quantity>½<unit>cup</unit></quantity> of hemp seeds and toast until they start to pop. Don't leave them for too long, since they can get bitter
Slice <quantity>1</quantity> peeled garlic clove
Slice <quantity>2</quantity> small green chilis
Finely chop <quantity>½<unit>bunch</unit></quantity> of coriander
Crush the toasted seeds using a mortar and pestle
Add the sliced garlic and green chili. Crush until there are no large chunks
Add the chopped coriander
Add the juice of <quantity>2</quantity> limes
Add salt to taste
Crush until combined
Transfer to a serving bowl. The hemp seed chutney is ready
