The Herb Tempura is a great appetizer, excellent for sharing with friends, and the perfect bite to follow a cocktail and dip in different mayonnaises and sauces.
Add 160 g of all-purpose flour to a bowl
Add 200 ml of cold water and whisk until smooth
Add 1 egg yolk and whisk to combine
Preheat 3 cups of vegetable oil to 180 °C
Pick the long stem ends off 1 bunch of basil, 1 bunch of coriander, and 1 bunch of chervil
Dip the herbs into the tempura batter until well coated
Fry the herbs for about 40s or until crispy. Place them on paper towels to drain
Add flaky salt to taste. The herb tempura is ready
