Langoustine Tail Cleaning
Cleaning langoustine tails is a very simple technique. After it is clean, you can grill it, pan-fry, poach it, or use any other cooking methods you’d like! You can also save the shells to make langoustine stock or soup.
Hold the langoustine firmly. Twist the tail and pull it off from the head
Lay the tail on a cutting board and crush the shell by gently pressing against the board with your hand. Peel the tail
Insert a toothpick in the end of the tail and extract the black vein by pulling it from the meat. The langoustine tail is clean
