Transfer the grated onion to a strainer and press it to drain its juices

Crack <quantity>1</quantity> egg over the grated potato and mix to combine

Add the grated onion

Add <quantity>2½<unit>tbsp</unit></quantity> of all-purpose flour and mix to combine

Add salt and black pepper to taste

Grate nutmeg to taste and mix to combine

Fill the bottom of a frying pan with vegetable oil and heat it over medium heat

Scoop the potato mix into the hot oil with a tablespoon. Press down to flatten the pancakes. This recipe will yield <quantity>10</quantity> small pancakes

Flip the pancakes and fry until they are evenly golden. Transfer to a plate with paper towel to drain excess oil

Transfer the potato pancakes to a clean plate and add some applesauce to taste. The latkes with applesauce are ready
