No need to stress over salad anymore. With just a few simple ingredients, you can have a salad that is perfectly seasoned in a way that highlights your greens and goes with almost anything, from meats to bruschettas or grain bowls. The lemon dressing is exceptionally flavorful and healthy.
I first learned to season greens this way at The Spotted Pig with April Bloomfield. She was adamant about letting greens shine and utilizing a very delicate open hand tossing motion while making a salad.
Squeeze the juice of ½ a lemon in a bowl. Drizzle 4 tbsp of extra virgin olive oil and mix by hand until fully combined
Add 3 cups of mixed green salad and mix to coat the leaves with the dressing
Add salt and ground black pepper to taste. Mix to season the salad
Plate the salad
Finish with flaky salt and black pepper to taste. The lemony greens are ready
