The lovage oil is a very versatile recipe that you can use for many different purposes. It's great for salad dressings and marinades, but it can also be used as a sauce for pasta or to put on top of a toast.

This technique is great for using with any herb you’d like. It can be done with parsley, basil, thyme, etc. You can store it in a glass bottle and put it in the fridge for it to last longer.

  • Heat 200 ml of vegetable oil to 80 °C over medium-low heat

  • Stream the vegetable oil over ½ cup of lovage while mixing with a hand blender on high speed until it is pulverized

  • Place the lovage and oil mixture in an ice bath until the temperature reaches below 10 °C

  • Pour the oil through a coffee filter set in a fine mesh sieve

    Step 3
  • Leave in the refrigerator until the oil is completely strained. The lovage oil is ready

  • Enjoy using it as a sauce or as a base for some herb pesto or salad dressings!
