Mackerel Mayo
Perfectly smoked mackerel with mayonnaise. Do you prefer to use homemade mayo instead? No problem, Chef Tina Van der Heyden also shows you how to do it on CREME. It's easy and delicious. You can also replace the mackerel with sardine.
Add <quantity>1<unit>tbsp</unit></quantity> of black capers to <quantity>500<unit>g</unit></quantity> of mayonnaise and mix with an immersion blender
Remove the bones from <quantity>2</quantity> mackerel fillets by cutting along both sides of the spine
Add a handful of hay to a pan and lay the mackerel fillets on top of it
Cover the pan with aluminum foil, pressing against the mackerel
Smoke the mackerel over low heat for 10-15m until fragrant and firm
Clean the fillets by removing the hay. The smoked mackerel is ready
Tear the smoked mackerel into small pieces
Season with salt and black pepper to taste
Add <quantity>2<unit>tbsp</unit></quantity> of the mayonnaise to the smoked mackerel and mix. The mackerel mayo is ready
